Bay trees flower from March to May and have clusters of greenish-yellow flowers. The female bay plants have black autumn berries. Although frost hardy, bays may need protection in colder areas in the winter. They can be susceptible to wind scorch and will thrive in a sheltered position.
Bays have lustrous, glossy, dark green leaved which are retained by the plant all year round. Clippings of aromatic leaves from bay trees are frequently used, either dried in bouquet garni or fresh, for flavouring stocks and sauces.
